One of our Drishti Blog contributors, Chanti, recently celebrated her birthday. Happy Birthday, Chanti!! She is also currently experimenting with a dairy-free, grain-free and sugar-free diet...sounds super fun right?!? Well, according to her there is still some fun to be had (plenty of it!) when eating this way... She showed us that you really can bake your cake and eat it too!
Let me start off by saying that transitioning to a dairy-free, grain-free and sugar-free diet wasn't exactly the most fun thing ever - at least not initially while my body was adjusting and going through withdrawals. But since I value my health and feeling good so much, it was a choice I had to make to take responsibility for my well-being. The great news is that, after those first few weeks, I began to feel awesome! So the fun really did begin then :)
Fast-forward to my birthday when I decided that this restricted diet was not going to stop me from having Birthday Cake. So I began my search online for the perfect cake that would meet my dietary needs and also taste great. After reading a bunch of recipes, I tried two different ones and the one I'm highlighting today definitely came out on top!

The truth is, you can often go too wrong with something that is chocolate flavored - at least not in my book. So I found this great recipe for paleo Chocolate Cake with a frosting on elenaspantry.com which is a great site for easy paleo recipes if you are looking for them!
One fair warning: This is a paleo recipe, and while I'm not strictly "paleo" I do find many recipes that work for my diet on paleo recipe sites. So this means that it is protein (egg) heavy -the recipe calls for 8 eggs to be exact, which definitely seemed like a lot- but trust me it all works out!

If you need to keep it totally sugar free, as I did, you can substitute the chocolate chunks for 1/2 cup cacao and about 1/2 tsp liquid stevia (sweeten with stevia to your liking). This means that there is no heating involved - just put all ingredients right into the blender. I also added 1/2 cup refrigerated coconut milk (the kind in a can) and whipped it like crazy until it thickened to my desired consistency.
