Feelin' the Summer Heat: Our Recipe for Pico de Gallo Salsa!

We heart this recipe. It has tons of flavor, takes advantage of fresh summer produce, is super healthy, and you can add it to just about everything! Oh yeah - it only has five ingredients, too.

INGREDIENTS:

  • 2 lbs ripe summer tomatoes, diced
  • 1 small red onion, diced small
  • 2-3 jalapeños, diced
  • Juice of one lime
  • Salt to taste

DIRECTIONS:

It's super easy! Using a large (and very sharp) kitchen knife, chop your tomatoes, and dice your onions and jalapeños really small. (For a cool tutorial on how to slice jalapeños, go here.) Squeeze the lime all over the top of everything and add salt to taste. Stir, let sit for five minutes, and serve!

You can eat it with tortilla chips, tacos and burritos (of course), but you can also be creative! This salsa adds flavor to leftovers, curries, rice dishes, salads... you name it. We like to think of it as a yummy summer salad without the lettuce. Is that so wrong??

Feel free to add fewer jalapeños if you don't want a ton of heat - this salsa is spicy! Yumm.
