Shockingly Delicious Vegan Sloppy Joes

We know, it sounds crazy.  Delicious and vegan don't generally go in the same sentence (or same paragraph, or same conversation, for that matter).  But at a vegan potluck recently, the Drishti team discovered that, contrary to popular belief, veganism can be tasty too.  We love the idea of eating ethically, but flavor helps too.

 

Because we love our customers, we decided to share this awesome and surprisingly simple recipe with you too!

Vegan Lentil Sloppy Joes:

(serves 2-4)

Olive oil, for frying
4 scallions (spring onions), chopped into 1/4-inch slices
2 baby chiles, finely chopped
1 cup cooked lentils
2 tsp. tomato paste
1 onion, very finely chopped
2 Tbsp. sweet chili sauce
1 Tbsp. mustard
A dash of salt and pepper
2 tsp. dark brown sugar
1 Tbsp. ketchup
1 cup finely chopped tomatoes
2 tsp. apple cider vinegar

Heat the olive oil and saute the onion until it turns translucent.  Add most of the scallions, leaving some out to top off your sloppy joes later on.

Add the chiles and continue to fry for a minute or two.

Add the rest of the ingredients and simmer for 20 minutes.

Serve on toasted buns, topped with the rest of the fresh scallions.  We love EarthBalance buttery vegan spread on the buns too.
