Our online store manager Candice whipped up this delicious vegan cole slaw, which adds flavor and color to just about anything. Feel free to experiment with different herbs and spices to make your perfect condiment for topping vegan hot dogs, sandwiches, salads, potatoes, and much more… yum!

Salad:

1 medium size purple cabbage, sliced thinly as possible

2 large carrots, shredded

3 tbsp fresh chopped dill

Dressing:

1/3 cup of extra virgin olive oil

2 TB vegenaise

1 TB dijon mustard

3 TB maple syrup or agave

3 TB apple cider vinegar

1 tsp salt

Instructions:

Combine chopped veggies together in a large bowl. In a smaller bowl, combine dressing ingredients. Then pour dressing on top of salad and massage well. Let sit in fridge for as little as 30 minutes, or overnight! Makes enough coleslaw to feed a small, coleslaw-loving army.
