And honestly you can have this healthy Do-It-Yourself ice cream and feel good about it! It's made from all natural ingredients and whole foods! BIG SMILE.
SO when the Summer heat is crankin and your body craves something cooling, nourishing and a little sweet to counter all the heat, the following recipe can be oh-so-fabulous for that exact purpose.
This recipe was found on MindBodyGreen.com which is a great website for healthy living tips and resources. They featured this recipe by Sita Huber, a functional medicine nutritionist, which is where I found this epic little dish to share with you! The following recipe is for banana chocolate flavor "ice cream" (she calls it pudding, but once it gets chilled, it's definitely ice cream in my book!) The coolest part is that after making it once you can see how easy it would be to alter the flavors with other fruits or nut butters.
So, here it goes! The best DIY Chocolate Banana "ice cream" ever!
- 1 large banana
- 1 large avocado
- 1 can coconut milk
- 3 heaping tablespoons of raw cacao powder
- 2 tablespoons melted cacao butter
- 1 heaping tablespoon tahini
- 1 heaping tablespoon mesquite powder
- 6 small dates softened in a little hot water
- A pinch of mineral salt
Blend all ingredients until creamy and then chill in the refrigerator until cool - OR put in the freezer for that real ice cream texture and feel. You can also top it with nuts, cacao nibs, bee pollen or fresh fruit!
This healthy treat is packed with good fats and protein and natural sugars. You can eat this for dessert, send your kids to summer camp with it, or have as a mid-day re-charge snack!
